INGREDIENTS:
1 1/2 lbs. dry navy beans (3 cups dried), soaked overnight, cooked until tender
1 cup ketchup
2 cups water
1/4 lb. diced salt pork or diced bacon
2 tbsp. dark molasses
1/2 cup chopped onion
2 teaspoons dry mustard
1 cup brown sugar
1 tbsp. salt
PREPARATION:
In a large pot, render bacon until crispy .Add the onions and continue to saute for 3 to 4 minutes. Season with salt and pepper. Stir in the beans and cook for 1 minute. Stir in the dark molasses, brown sugar, water, ketchup and mustard. Mix thoroughly. Bring the liquid to a boil and reduce to a simmer.Cover and cook on low 5 to 7 hours (high 2 1/2 to 4 hours), stirring occasionally.
